Salmon Poached on Spinach with Mango Sauce

From: 30 Easy, Healthy Recipes Your Family Will Love!

Ingredients:

• Frozen wild salmon

• 10 ounces fresh spinach

• Splash of olive oil

• Fresh rosemary (or spice of choice), to taste

• 1 ripe mango

• Handful of cilantro

• ¼ cup red onion

• Juice of one lime

• Fresh jalapeno, to taste

• Large sheet of parchment paper

Directions:

1. Pre-heat oven to 400 degrees.

2. Place spinach on large sheet of parchment paper; then top with salmon and olive oil. (May add fresh rosemary or spice of choice).

3. Seal up parchment by folding and tucking under before putting in oven.

4. Bake 18-20 minutes depending on thickness of fish.

5. While salmon cooks, prepare Mango Salsa: Chop and combine mango, handful of cilantro, red onion, and jalapeno.

6. Squeeze lime juice over mixture and stir.

7. Serve salmon/spinach with salsa on side.

Serves 4.
