    • Hi Janet! In our digestive system, we have so-called “good” bacteria that overpowers the “bad” bacteria that can make us sick. White potatoes contain resistant starch, which “good” bacteria feeds on and allows it to thrive and continue to fight off “bad” bacteria. I hope this helps!
